Similar to traditional Ratatouille, but without the eggplant, Spain's "Pisto Manchego"--so named for Castilla-La Mancha, the region of Spain where the dish originated (also the birthplace of Manchego cheese)--is a rich blend of vegetables. In Spain, this dish of zucchini, red and green bell peppers, and onion, simmered in our homemade tomato sauce, is generally eaten a with fried egg on top, accompanied by some fresh, crusty bread for sopping up every last drop.
